Tips:

  • To prepare, wear thick gloves and remove the stems from the leaves - the stems are a little tough and should be discarded.

  • The prickly nature of the nettle disappears once the vegetable is cooked, so you can either wash the nettles and sauté them or blanch them directly.

  • Other than their prickle, nettles can very much be treated like spinach, just with a deeper and more peppery flavour.

  • If you are hoping to forage nettle, head out spring or early summer and look for young leaves.
