Tips:

  • There are many varieties of seaweed: Nori, Kombu (Kelp), Wakame, Ogonori, Umibudo and Hijiki.

  • One of the native UK varieties is Kelp, a thick seaweed treasured for its rich umami.

  • If purchasing dried Kelp, make sure to store it in an air-tight container. Use it as-is to enhance flavour and add umami, or rehydrate and use in small quantities in salads or soups.
