Tips:

  • When buying, look for small, firm, dry mushrooms.

  • To prepare the morel, remove the very bottom of the stem and slice the mushroom in half. The stalks will be hollow (if they are not, throw them out!). Due to the irregular shape of the mushroom cleaning them can be hard. Try using a cloth or pastry brush as a first port of entry. If they still look dirt-ridden, place them in some cool water and quickly swirl them around to remove the grit.

  • Do not eat Morel mushrooms raw, they will make you very ill.
