Tips:

  • Lentils are a legume that comes in many varieties, most commonly referred to as Red, Green, Black and Yellow.

  • Lentils can be classified according to their size, whether they are split or whole and shelled or unshelled.

  • Split and/or shelled Lentils will tend to cook more quickly and turn mushy rather than hold their shape.

  • Before cooking, wash thoroughly and check for stones, debris or spoiled lentils.

  • To speed up the cooking process, pre-soak lentils for a few hours.
