Tips:

  • When buying fennel, look for a bulb that is smooth and white with bright green stalks and bushy fronds.

  • Fennel is wonderful both raw and cooked. Raw, it has a refreshing anise flavour and slight bitterness - cooked, it develops a rich sweetness.

  • Food waste tip: Fennel fronds and stems are also edible. The fronds make wonderful garnishes and can be used as an herb, whereas the tougher stems can be used to flavour soups and stews.
